My name is Archana, I'm an Indian grad student who lives in the US and maintains this blog. I like to cook, bake and offlate, take photos as well. I promise a photo-ridden blog soon - for now, it's got just text. Cooking for me is more a passion than a necessity and I hate following recipes as I think it comes in the way of being creative. That being said, have fun trying these recipes!

Chocolate Mousse

When you're craving chocolate but you don't feel like indulging in all the butter and whipped cream, here's a 'fairly' healthy alternative.

1/2 block tofu
1 bar baking chocolate(either dark or milk)
2-3 spoons rum(optional)
1/2 tsp vanilla essence
1 tbsp soy milk
2 tbsp confectioner's sugar
(if the chocolate is unsweetened use 4 tbsp instead of 2 tbsp)

1. Heat the chocolate in a double boiler. I placed a glass bowl on saucepan of boiling water.
2. Puree the tofu in a blender until it is well-blended.
3. Slowly add the melted chocolate and continue to blend.
4. Add the remaining ingredients and blend them well.
5. Pour the mousse into wine/ martini glasses and refrigerate for atleast 4 hours.

Tofu Chapathi

1 pack firm tofu
chopped coriander
1 green chili
1 small piece ginger
1/4 tsp jeera
salt to taste
2-3 cups wheat flour

1. Blend the tofu with the coriander leaves, green chili, ginger, salt and jeera.
2. Add the wheat flour to it and knead it with some water to make chapathi dough.
3. Make chapathis as usual.

Tofu Spinach Rava Idli

So its always bothered me that rava idli has nothing but rava in it, and I tried to make it healthier(and also finish the tofu I had at home which is going to expire in a few days).

1/2 cup tofu
1 cup rava
1/4 tsp oil
1 tsp chana dal
1/4 tsp mustard
1 pinch hing
2-3 chopped green chilies
some curry leaves
chopped coriander
chopped spinach(finely chopped)
1 cup sour curd

1. Blend the rava and the tofu in a mixie.
2. Heat the oil in a pan. Add mustard, chana dal, hing, curry leaves and wait until the mustard splutters. Put this in a bowl.
3. Saute the rava in the pan with a few drops of oil until it is light brown.
4. Blend the rava, tofu and yoghurt in a mixie just to make sure they are uniformly mixed.
5. Mix this with the rest of the ingredients - adding a little water to get the consistency of idli batter.
6. Make idlis as usual.

Oatmeal Dosa

I continue my experiments with healthy cooking and tried this one out.

1 cup cooked oatmeal - use the finer variety rather than the rolled oats
1 cup rava
2-3 finely chopped green chillies
1 piece ginger grated
a small amount finely chopped curry leaves
a small amount finely chopped coriander leaves
1.5 cups sour curd (or usual yoghurt with some lime juice)
1/2 tsp jeera
1 pinch hing
salt to taste

1. Mix all the ingredients - you can splutter the jeera before adding it if you like.
2. Add water to make it the consistency of dosa batter.
3. Make dosas with the batter. Note that the oats will make it very soft - if you like you're dosas crispier add rice flour to the batter.
