My name is Archana, I'm an Indian grad student who lives in the US and maintains this blog. I like to cook, bake and offlate, take photos as well. I promise a photo-ridden blog soon - for now, it's got just text. Cooking for me is more a passion than a necessity and I hate following recipes as I think it comes in the way of being creative. That being said, have fun trying these recipes!

Paneer Makhani

2 cups paneer cubes/ 250 grams ready paneer packet or Home Made Paneer
2 cups freshly pureed tomatoes
¼ cup thick cream
1 cup chopped onion
1 tablespoon chopped ginger
3-4 cloves of garlic
1 teaspoon cardamom powder
1 teaspoon turmeric powder
½ teaspoon cumin powder
½ teaspoon garam masala powder
½ teaspoon red chilli powder
1 tablespoon kasuri methi
2 teaspoons honey
1 tablespoon Vegetable/Sunflower oil
Salt to taste

Cut the paneer into small cubes and heat it in the microwave for 3-4 minutes with a little turmeric, a few cloves and a small bayleaf (these can be substituted with a little garam masala powder).

Grind the onions, garlic and ginger into a fine paste.

Heat oil in a pan and sauté the onion paste. Once it is slightly golden, add turmeric powder, cumin powder, cardamom powder, red chilli powder and garam masala. Sauté for a few minutes on low heat.

Add the tomato puree and allow it to simmer until the tomato puree thickens, about 5-8 minutes.

Add cream, honey and salt and simmer for another 10 minutes.

Drain the water from the paneer and add it to the above makhani. Add kasuri methi and simmer for few minutes.
